2 cups oats
1/4 cup flour
3/4 cup packed light brown sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, melted
1 12oz jar raspberry or strawberry jam
Spray a 9x9 inch pan with cooking spray. Blend oats, flower, brown sugar, baking soda and salt with fingertips or spoon until combined. Stir in melted butter. Reserve 3/4 cup oat mixture for topping; transfer remainder to baking pan, pressing it firmly in bottom. Bake in middle of oven until golden, 12-15 minutes. Remove from oven and spoon on jam, leaving 1/2 inch border around edge. Crumble reserved oat mixture on top. bake until golden and bubbly, 30-35 minutes. cool completely in the pan, then cut into squares.
